Bryan Shilton is a lifelong restaurant professional. His focus has always been on creating amazing experiences for guests. Most recently, Bryan managed various entities for James Beard award winning Chef, Suzanne Goin, and James Beard award winning Restaurateur, Caroline Styne. He played an essential role in both AOC locations, and the Hollywood Bowl Food & Wine program. His touch of fine dining, with an emphasis on service with warmth, and a dedication to unyielding hospitality stands to be the perfect compliment to Chef Rich Mead’s reputable vision, and Executive Chef Adam Cherney’s creative prowess and culinary acumen. The wine and cocktail program are under his purview as well, so expect to see some exciting seasonally driven bar offerings, and a nuanced wine list that accentuates an already uniquely diverse menu.
